Classic Breakfast Recipe

Ingredients

  • 8 eggs
  • 8 sausages
  • 8 slices bread
  •   salt
  •   pepper
  •   oil
  • 2 lbs yukon gold potatoes
  • 1 tsp paprika
  • 3 tbsp extra virgin olive oil
  • 1 tbsp parsley

Preparation

Preheat oven to 400F. Line a rimmed baking sheet.

Rinse and peel potatoes. Dice into 1/2" cubes. Place potatoes in a large bowl and toss with 3 tbsp olive oil, sprinkle paprika and 1/4 tsp black pepper and 1 tsp salt. Toss to coat evenly. Transfer potatoes to the baking sheet in a single layer. Cook 20 minutes. Stire potatoes, set oven to broil and bake another 2-4 minutes until golden brown. Sprinkle with parsley.

Meanwhile, place sausages in a pan in one layer over medium-high heat - it may be necessary to do this in multiple batches. Cook for 10-15 minutes, turn the sausages halfway through to cook on both sides.

In another pan, prepare the eggs as desired. Salt and pepper to taste.

Toast slices of bread and butter.

Serve hot!
