Peaches and Greens Salad Recipe
Preparation Time: 30 minutes|
- 3 cups salad greens: Boston lettuce, red lettuce, baby spinach, arugula
- 2 peaches
- 1/4 cup red onion, chopped
- bocconcini balls
- 1 peach, sliced & pitted
- 2 tbsp apple cider vinegar
- 2 tbsp extra virgin olive oil
- 2 tbsp water
- 1 tbsp honey
- 1/4 tsp salt
Grill the peaches on aluminum foil on the barbecue, until softened. Combine dressing ingredients in a blender.
Mix together salad in a large bowl and pour dressing over immediately before serving.
