Quinoa Burger Recipe

Servings: 16 patties

Ingredients

  • 2 2/3 cups cooked quinoa
  • 3 large eggs
  • 1/2 tsp salt
  • 1 tsp dried oregano (or your favorite dried or fresh herbs)
  • 1/4 tsp smoked paprika
  • 1/4 tsp red chili pepper flakes
  • 1/2 onion, chopped finely
  • 4 cloves garlic, minced
  • 1 cup crackers or bread crumbs, crushed (add as needed if the mixture is too wet)
  • 1/2 cup zucchini, grated
  • 1/2 cup carrot, grated
  • 1 tbsp olive oil
  • Garnish
  •   lettuce
  •   pickles, sliced
  •   cheese, sliced
  •   buns
  •   hot sauce or sriracha

Preparation

  1. Mix all ingredients (except olive oil)
  2. Form mixture into patties (should make about 16 patties depending on the size). Add extra breadcrumbs if the mixture is too wet to form into patties
  3. Add oil to a pan and heat over medium-low heat
  4. Add patties to pan (in batches of 5) and cook on one side for 7 minutes, then flip and cook on the other size for another 5 minutes. Add more olive oil to the pan for each new batch.
  5. Serve over salad or in a bun with your favorite toppings! (We topped each burger with sliced pickles, arugula, hot sause & Swiss cheese slices!)

TIP: Make the uncooked quinoa mixture ahead of time as it can last in an air-tight container for a few days, then cook the patties when you’re ready.
