- zucchini, sliced
- red, green, yellow peppers, cut into 1" pieces
- onion, sliced
- eggplant, sliced
- tomatoes, sliced
- optional: protein (chicken)
- olive oil

Fire up the barbecue to a medium heat!
Whisk together olive oil and spices in a large bowl. Toss the sliced vegetables in the oil to lightly coat them. Grab the skewers and alternate putting each vegetable for a colourful and varied serving of vegetables.
Grill the kebabs on two sides for 6 to 10 minutes, until all vegetables are tender.
