Watermelon-Feta Skewers Recipe

Ingredients

  • 3 lb watermelon, cut into 1-inch cubes
  • 24 mint leaves
  • 8 oz feta cheese, cubed
  • 24 leaves basil
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 24 (3-inch) wooden skewers

Preparation

  1. Lightly toss watermelon and feta in a bowl with the oil, salt and pepper; let stand in the fridge for a half hour.
  2. Thread a piece of watermelon, a mint leaf, a cube of feta, a basil leaf, and top it off with a final piece of watermelon. Place on serving plate and drizzle with remaining marinade. Serve immediately.
